SPINACH EGG CHEESE BAKE
Makes 8 servings
6 eggs
2/3 cup whole wheat flour
7 ounces fresh spinach
1 pint low fat cottage cheese
5 ounces shredded cheddar cheese
Black pepper, to taste
4 ounces goat cheese, crumbled
In a large bowl, beat eggs and whole wheat flour.
Add spinach, cottage cheese, cheddar cheese and black pepper, mixing until combined with egg mixture.
Fold in crumbled goat cheese.
Spread mixture in a 9x13-inch baking dish sprayed with cooking spray.
Bake at 350ºF for 40-45 minutes.
Note: Recipe can easily be cut in half for a 4-serving size.
