ROASTED POTATOES WITH WASABI SAUCE
1 pound potatoes - small baby potatoes. If available, choose a variety of colors.
olive oil
sea salt
fresh ground black pepper
1/3 cup plain yogurt
2 tablespoons wasabi mayonnaise
Options:
Add fresh rosemary - strip leaves off of stem.
Add fresh sage, thyme,and parsley - remove stem and chop.
Pre-heat oven to 400 degrees, place baking sheet in oven as it preheats.
If you have larger potatoes, cut each into quarters or eighths.
In a bowl, toss potatoes and olive oil (be generous with oil), salt, pepper and herbs.
Bake for 40 minutes. Leave door closed and do not touch the potatoes while they cook.
While potatoes are roasting mix together yogurt and wasabi mayonnaise.
Adjust to your taste.
Notes: These delicious crispy potatoes make a great, filling side dish or snack.
