Pumpkin Muffins
Makes 24 muffins

4 eggs, beaten
1/4 cup molasses
1/4 cup honey
1/2 cup brown sugar
3 cups pumpkin puree
1/4 cup vegetable oil
4 cups whole wheat flour
4 teaspoons baking powder
1 tablespoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon allspice
1 teaspoon ginger
1/2 teaspoon salt
1 cup raisins
1 cup pepitas, optional

Beat eggs in large mixing bowl.  Add molasses, honey, pumpkin and oil; mix well.  Mix together in a separate bowl the whole wheat flour, baking powder, cinnamon, nutmeg, allspice, ginger, and salt; add to pumpkin mixture and mix well.  Mix in raisins and pepitas (optional). 

Spoon into 24 paper-lined muffin tins and bake 20 minutes.

Note:  Pepitas add a nice "crunch" texture; however, any nuts may be substituted with good results.
