CHOCOLATE COCONUT BALLS
These yummy chocolate balls are a good way to eat the healthy fats in almonds and flax seeds. Low in sugar and high in fiber they won’t weigh you down. The quality of cocoa powder used matters. I like using Green and Black’s organic cocoa powder. Try using your favorite.
1/2 cup almonds
1/3 cup freshly ground flax seeds
1/2 cup Green and Black’s unsweetened cocoa baking powder
1/2 cup unsweetened coconut flakes
1/3 cup raw organic oats
1 tablespoon coconut flavoring or vanilla
1/2 cup maple syrup
A pinch of salt
Coating
1/2–1 cup coconut flakes
Grind almonds in food processor for one to two minutes. Add the rest of the ingredients to the food processor and blend till fully mixed. It is best to grind the flax seeds in a coffee grinder before adding to the rest of the ingredients. Pour coconut flakes into a bowl. Roll the dough into one- to two-inch balls and roll them in the coconut. This is made easier and less sticky when your hands are wet. Place the balls in a container lined with wax/parchment paper. Be sure to put extra wax/parchment paper between layers. Refrigerate for four hours. Keep Refrigerated.
